Maple Almond Chopped Salad

Ingredients:

  • 2 Cups Kale
  • Blackberries
  • Half an Apple (Any Kind)
  • 1/4 Cucumber
  • Feta Cheese
  • Almond Slices
  • Sesame Oil

Sauce:

  • 2 Tbsp Mustard
  • 2 Tbsp Maple Syrup
  • Splash of Rice Vinegar (or apple cider)
  • 1/2 Tbsp Siracha (optional)
  • Lemon Juice
  • 1/4 Tsp minced Garlic (or powdered)
  • Salt (to your liking)
  • Splash of Water (to thin out)

Instructions:

  1. Start by heating a pan of sesame oil on medium then adding Kale
  2. Let Kale cook until crispy and while you wait make the sauce
  3. Combine mustard, maple syrup, rice vinegar, siracha, lemon juice, minced garlic, salt and water (if needed) and stir until combined
  4. If Kale is crisp to your liking, take off stove and put to the side
  5. Peel and cut your apple and cucumber into small cubes, then rinse blackberries and cut in half
  6. Assemble the salad by adding your cut fruit and vegetables to the kale, adding almonds and feta, then pouring on the dressing
  7. ENJOY!:)
Papaya Mango Berry Smoothie

Ingredients:

  • Mango (Frozen or Fresh)
  • Blackberries (Frozen or Fresh)
  • Kale
  • Papaya (Frozen or Fresh)
  • Apple (Frozen or Fresh)
  • Water
  • Ice (if needed)

Instructions:

  1. Add cut Mango papaya (without seeds) and Apple into pieces (if needed) and add to the Blender
  2. Cut stems from Kale
  3. Add in Blackberries, Kale, Water and Ice (if needed) and blend until Smooth!
  4. SERVE and ENJOY!
